On entering this restaurant, guests are completely screened off from the noise of the city outside. Extensive research was carried out to determine the sound environment in which a diner would feel most at ease. In the end, a natural cave served as a model. The form was created with timber ribs, the shape and spacing of which were tested in 3D models. The ribs also mask an existing ventilation duct that runs diagonally across the ceiling. Following the line of the low points of the ribs, the yellow strip of a sushi conveyor belt extends diagonally through the dining area, attracting attention to itself with a colourful array of food. Here, removed from the hubbub of the city, guests can enjoy themselves in peace.
